This is hardly a recipe, instead, it is an easy idea to bring amazing flavours to already lovely summer staples such as roasted potatoes, corn, grilled fish or vegetables. So easy, and so effective. Mexican Twists are going summer!

Chipotle Lemon Butter 

-¼ cup softened butter

-2 to 3 tbsp chipotle adobo (or very finely chopped chipotle peppers)

-½ lemon, juiced

-Tajin, to taste

-salt and pepper to taste

1 Bring the butter to room temperature and once softened, mix with the lemon juice, Tajin, salt, and pepper to taste. 

2 The consistency can be creamy for spreading or melted for brushing.


Roasted Chickpeas and Potatoes

-500g Any kind of roasting potatoes, chopped into even-sized chunks

-1 tin chickpeas, rinsed, drained and pat dried

-olive oil, as needed

-salt and pepper to taste

1 Toss the potatoes with olive oil, salt and pepper. Roast them in the air fryer or oven until soft inside and roasted outside. Add the chickpeas to the roasting pan halfway through the roasting process since they take less time than the potatoes. 

2 Once the roasted potatoes and chickpeas are done, allow them to cool down for 5 minutes at least. Add the Chipotle Lime Butter and toss until everything is evenly coated.
