Have a veggie wrap but make it super tasty! A quick and delicious chipotle hummus is just the start of the tastiest veggie wrap. Perfect for picnics or lunch! Plenty of Mexican flavours to make your day brighter! Eat the rainbow!

Chipotle Hummus

-200g chickpeas, cooked, rinsed, drained

-1 chipotle in adobo

-2 tbsp tahini

-1 large garlic clove

-1 lemon, juiced

-½ tsp ground cumin

-½ tsp Tajin

-2 tbsp olive oil

-salt to taste

1 Add all the ingredients to a food processor and blend until very smooth. Use a spoon to scrape the sides until everything is incorporated. Sprinkle some Tajin and drizzle olive oil on top. 

Note: You can add water to adjust the consistency. Ours did not need it, we only added more lemon juice as liquid. Using Tajin as part of the seasoning is just fantastic! The flavours complement each other!


Pickled Shallot

-1 shallot, thinly sliced

-½ lemon, juiced

-¼ tsp oregano

-½ tsp salt

1 Mix all the ingredients and allow the shallots to rest for a few minutes.


Chipotle Hummus Wrap

-4 to 6 wraps

-3 cups lettuce, shredded

-½ large carrot, thinly sliced

-½ cucumber, thinly sliced

-½ avocado, sliced

-½ pepper, thinly sliced

-2 pickled jalapenos, sliced or nacho jalapenos

-pickled shallot

-chipotle hummus

-feta cheese, crumbled

-Cilantro Sauce, recipe here 

-sprouts

1 Warm up the wraps and add a good amount of chipotle hummus followed by a bit of lettuce, sliced carrots, sliced cucumber, avocado, pepper slices, and pickled jalapeno slices and drizzle with the cilantro Sauce  Add a few pickled shallots, sprouts and crumbled feta on top. 

2 Bring the sides of the wrap to the centre and roll the wrap, squeezing everything inside until folded. Slice in half.

 

You can use this delicious chipotle hummus as a dip, in sandwiches or with veggies as a healthy snack! So good!
