On September 16, Mexicans all around the world celebrate their Independence. The day is an official holiday and the celebrations start on the 15. In Mexico, people gather outside official buildings and celebrate with parades, traditional dance routines and fireworks to name just a few. It was Miguel Hidalgo, a Catholic priest who in 1810 declared Mexico’s independence from Spain. He rang the bell in the town’s church and after a moving speech, he started a movement that lasted over 10 years. In the end, Mexico gained its independence from the Spanish rule that lasted 300 years. 


Our favourite way to celebrate is with food, of course! There are a few traditional Mexican dishes that are particularly popular during this month. Here are some of them.

Chiles en Nogada

A beautiful and traditional Mexican dish made with poblano peppers stuffed with minced beef and covered with a beautiful walnut sauce. This visually stunning dish showcases the green, white and red from our flag thanks to the green from the poblanos, the white from the walnut sauce and the red from the pomegranate seeds that are used as toppings. 

Pozole

How to explain what pozole means to Mexicans? Pozole is a beautiful soup made with hominy and pork or chicken. It can be white, green or red depending on the ingredients used to make the stock. Topped with shredded lettuce or cabbage, onions, radishes, spicy salsas and lime. A beloved dish year-round but commonly appears during our September celebrations. Enchiladas

Tamales

One of our most traditional dishes is made with masa, a nixtamalized corn dough filled with different dishes and steamed until thoroughly cooked. Tamales are wrapped in corn husks or banana leaves depending on the area where they are made but a popular dish all over the country and beyond.

Mole

One of the most beautiful sauces in Mexican cuisine is made by carefully blending fruits, chiles, nuts, chocolate, spices and many, many more ingredients. There are many different mole sauces that change according to the ingredients used. All of them are amazing, a dish in its own right.
