Enchiladas are one of the most traditional and popular Mexican dishes and for a very good reason: enchiladas are delicious! Not only that, enchiladas are versatile too. They can be vegan, spicy, cheesy, fried or baked. 


By definition, enchiladas are corn tortillas rolled around different fillings and covered in a savoury sauce. As you can see, this is quite open to interpretation regarding what kind of fillings and sauces to use. Even when some people use flour tortillas, we highly recommend going for corn tortillas as the consistency, flavour and nutrition are much better whilst keeping the dish mostly gluten-free. We have made a few to date, all of them special, all of them delicious. Here are some of our favourite enchiladas to date.

Creamy Enchiladas (V)

The title doesn’t say much but don’t be put off by that. These enchiladas pack a huge flavour payoff. The sauce is made with guajillo and ancho chiles, cooked into a lush, creamy sauce that is perfect to bring so much to the rolled-up tortillas filled with ricotta and kale. The Best Enchiladas Rojas

These ones are very much Tex-Mex's amazingness. The sauce here is not gluten-free since it uses flour as a thickening agent. The result is a super delicious and creamy sauce perfect for these enchiladas. The fillings can be either chicken, beans or cheese. These enchiladas are perfect to make ahead and just place in the oven when dinner needs to be ready. They are the classic enchiladas covered in gooey cheese. From oven to table goodness! Pasilla Enchiladas

These ones are one of our favourites. So rich and bold. Once again, the filling is not as important as the sauce and the tortillas. You can taste tradition in every bite. Can they be messy to make? Yes. Is it worth it? Absolutely yes. Find the recipe here. 

 

Enchiladas Mineras

These ones are incredible! A beautiful filling, lush sauce, topped with fresh cabbage and roasted vegetables! A fantastic adventure and a meal to remember. Find the recipe here. 

 

Enchilada Stacks or Pastel Azteca

These enchiladas style is a category on its own because even when the idea is the same, the presentation is different. Here we have layers of sauce, tortillas, filling and repeat. The result is something like a Mexican lasagna. Very friendly when feeding a crowd, and easier to make since there is no rolling involved.

The same, but different

Here we have three classic recipes that even when they don’t have ‘enchiladas’ in the name, are essentially the same. Folded or rolled tortillas with a filling and covered in sauce. The difference here relies on the sauces used. These are our favourites:


Enmoladas

These are delicious corn tortillas covered in mole sauce. If you have tried mole before, you’ll know that mole is a dish on its own. So beautiful, so complex, and so delicious. This is why the filling inside these enchiladas is quite simple, however, the mole with the lightly fried corn tortillas is absolutely magic. A classic from our Mexican cuisine. Enfrijoladas - Bean Sauce

Another classic from our collection. This time, a creamy bean sauce is used to cover delicious folded corn tortillas filled with crumbled feta cheese. Perfect, simple, delicious traditional Mexican food. Find the recipe here. 


Entomatadas - Tomato Sauce

Another classic, this time the essence of the enchilada lives in the folded and filled corn tortillas but with a non-spicy tomato sauce.
