These roasted vegetables are so simple to make. Only a few ingredients transform this dish into something really special. The ancho chilli seasoning gives a lovely touch that complements the sweetness of the roasted vegetables. The chipotle-tahini yoghurt brings everything together with its smoky and nutty flavour.
Adobo Roasted Vegetables
-1 sweet potato
-1 small red onion
-½ large aubergine
-2 tbsp olive oil
-Adobo Seasoning to taste
1 Set your oven to 200°C
2 Cut the sweet potato and aubergine into pieces roughly the same size. Chop the red onion in quarters.
3 Add the vegetables to a large baking tray and drizzle over the olive oil and a good shake of the Adobo Seasoning. Toss the vegetables around until they are evenly coated. The vegetables don’t need to be overly drenched in oil or seasoning, just evenly distributed.
4 Roast the vegetables for anything between 25-35 minutes. Toss them halfway so they roast evenly.
Chipotle-Tahini Yoghurt
-3 tbsp Greek yoghurt
-1 tbsp tahini paste
-1 tbsp water
-2 chipotle peppers La Costeña
-2 tbsp lemon juice
-Salt
1 In a bowl, mix the tahini paste and the water. Add the yoghurt and mix them well.
2 Finely chop the chipotle peppers until they are almost a paste. You can remove the seeds from the peppers if you don’t want the sauce to be too spicy.
3 Add the chipotles to the yoghurt along with the lemon juice and about a tsp of salt. Mix well and adjust the ingredients to your taste.
To Serve
-Black rice
-Fresh coriander
-Pomegranate seeds
-Fresh coriander
1 Serve the roasted vegetables with plain black rice and a good serving of chipotle-tahini yoghurt. Dress with fresh coriander and add pomegranate seeds.

- Black rice has such a fantastic texture and nutty flavour that goes perfectly well here. In this case, the vegetables and the yoghurt sauce are so flavourful that the rice is the perfect complement.
