Sauces are an important part of what makes a dish. In the case of Mexican sauces, there are many ingredients blended together that have many flavours, consistencies and uses. There are simple ones such as tomato-based sauces and there are rich and complex ones such as moles where ingredients like chocolate, dried chillies, nuts and spices form one of our most unique sauces. A dish on its own. 


To make a Mexican sauce you don’t always need to go the traditional way. Sometimes the addition of one Mexican ingredient can add an unexpected but delicious twist to regular sauces. We, personally, are firm believers that by taking advantage of living in the UK, we can experiment with unusual ingredients from all over the world and discover new flavours and combinations. This time, we will focus on three basic ingredients that can provide the possibility of including new flavours in your meals.  Here are some of our favourite dishes that include a sauce so delicious that is worth sharing.

 

Chipotle Sauces

Chipotles are perfect to be used in sauces. One of the stars of Mexican food. Chipotle peppers are bold, smokey, spicy but when used in sauces, particularly with cream or tomato, all the properties mellow down and all that remains are the flavours above the heat. Chipotle sauces are perfect with pork, chicken, beef and of course, vegetarian dishes. We add them virtually to everything. Tomatillo Sauces 

Tomatillo is another star ingredient in Mexican food. These green tomatoes are the key to most green salsas and sauces. Its flavour is crisp and tangy and the sauces are fantastic with everything, from beef to pork, chicken and vegetables. Dried Chillies Sauces 

Dried chillies are incredibly important in Mexican gastronomy. Every single one of them has a different property, different flavours that are expertly blended in simple or complex sauces like moles.  Working with dried chillies can be a little bit daunting. For some dishes, they are first lightly toasted and then hydrated. For other ones, they are fried. It requires a lot of knowledge to know the when and how of dried chillies. We know this first hand so we have carefully selected recipes that require simple steps to achieve a delicious authentic sauce. They are such a fantastic ingredient to have at hand and as long as a couple of things are taken care of, such as removing the seeds and not overcooking them, the work always pays off.
