Crispy taquitos are always amazing. There is nothing better than crunchy corn tortillas, filled with something tasty and dipped in delicious sauce. These taquitos are exactly that! You can make them in the air fryer or in a pan. The result is crunchy and delicious and it will make you very happy! 

Adobo

-2 guajillo chiles

-1 ancho chile

-½ white onion

-2 garlic cloves

-½ tbsp white vinegar

-salt and pepper to taste

-½ cup chopped tomatoes

-½ cup chicken stock

-2 tbsp vegetable oil, divided

1 Remove the stem and seeds from the guajillo and ancho chiles

2 Add one tablespoon of oil to a frying pan and fry the chiles, onion and garlic. Stir often and remove the chiles first. They need to become fragrant and soft but they shouldn’t burn because they will turn bitter. Remove the garlic cloves next and transfer them to a blender. 

3 Remove the onions once they are nicely charred and transfer them to the blender with the vinegar, tomatoes and chicken stock. Blend well until smooth. If your blender leaves small bits of chiles behind, sieve the sauce to remove any large bits. 

4 Add the remaining oil to the frying pan and once hot, pour the sauce and simmer for 15 minutes until it thickens. Adjust seasoning to taste at this stage with salt, pepper and optional chicken bouillon. Keep the sauce hot until serving.


Chicken Taquitos

-2 chicken breasts, cooked and shredded

-adobo

-10 to 12 corn tortillas

-diced onions

-diced avocado

-feta cheese, crumbled

-creme fraiche

-vegetable oil, the necessary

1 Prepare the chicken while is still hot. Add adobo to the shredded chicken until it is nicely coated, about 3 spoonfuls should do the trick, but adjust to your taste. Keep the chicken and adobo hot. 

2 To a frying pan, add enough oil to cover the bottom of the pan and once hot, lightly fry the corn tortillas, one at a time on both sides for a few seconds until they start to get crispy on the edges. Transfer them to a paper towel-lined plate to absorb any oil excess. Continue with all the tortillas.

3 Add chicken to the tortillas and roll them tight until you finish the chicken filling. Place the taquitos in the air fryer and fry them at 200C for 8 minutes or until they are golden brown and crunchy. 

4 If you are not using the air fryer, warm the corn tortillas first and fill them with chicken before frying them in a frying pan with plenty of vegetable oil. Turn them often so they fry evenly on all sides. Transfer them to a wire rack or a plate lined with paper towels to absorb any excess oil. 

5 Add a couple of tablespoons of adobo to a plate and arrange taquitos on top. Then add more adobo along the middle of them and sprinkle cheese, onions, avocado and cream before enjoying them!
