Mexican breakfasts are quite epic. There’s just no other way to say it. They are hearty, incredibly tasty and they will keep you full until your next meal. 


When in México, one is spoiled for options! There are street vendors left and right to feed you at the ready depending on your very specific needs. Did you drink a bit too much last night? Then there’s nothing better than birria at five in the morning from your trusted street stand. Are you in a rush to work? Pick up a quick fruit juice from one stand while you order a torta from the next one. Does your commute include a long ride? Then stop by the burrito’s guy, that one with the cooler full of homemade burritos, wrapped in foil and little packs of salsas ready to take away. These are just some examples of express breakfast that we all love.


What if you have more time and make breakfast a time to socialize, a time to catch up with friends or family? We often have business meetings over breakfast or celebrate birthdays too. For these occasions, you’ll have a rich menu to choose from where things like huevos rancheros, huevos divorciados, all kinds of chilaquiles, molletes or huevos motuleños (a delicious breakfast that includes eggs, refried beans and fried plantain) are done to perfection. 


Us mortals, living abroad and just able to daydream about popping out and picking our breakfast from our trusted street stand is just that, a dream. Chilaquiles

If you’ve never had chilaquiles, let us just say that you are missing out. It is a quintessential Mexican dish made with crunchy corn tortillas and absolutely covered in salsa. That’s it! Everything else is depending on the style or place where you’re having them. Sometimes chicken or eggs are added on the top. Some other times crumbled fresh cheese is sprinkled over or a generous amount of crema drizzled on the top. Even better, sometimes all that and more is added and then is quite easy to touch the sky. You read that right! We also love beans on toast…just not those beans. Molletes are a classic Mexican breakfast of epic proportions. Start with crusty bread, add a good amount of refried beans, top up with cheese, and fresh salsa and you get a classic mollete. But wait, you can build on that!
