There are certain combinations that always work and a salsa made with tomatillos and cactus is one of those. So simple to make at home! The result is a flavourful bomb that is a perfect salsa for everything and anything! We absolutely loved topping these simple but delicious pinto beans and grilled halloumi cheese tacos with plenty of this salsa.

Cactus Salsa Verde

-1 440g cactus jar

-1 790g tomatillos, drained

-½ small onion, halved

-3 garlic cloves

-1 to 2 jalapenos

-a handful of coriander

-salt and pepper, to taste

-vegetable oil

1 Open the cactus jar and transfer them to a fine mesh colander. Rinse them with plenty of cold water and allow them to drain before using. Cactus often come with a whole green pepper that can be quite spicy!

2 Add to a blender the tomatillos, onion, garlic, jalapenos, coriander and salt and pepper to taste. Blend until smooth.

3 Set a frying pan to medium-high heat and once hot, add the oil and pour the tomatillo salsa. Bring to a boil and cook for 5 minutes. Add the cactus, and cook for a further 10 minutes. Taste and adjust seasoning if needed. 


Notes

  • Cactus are one of our most beloved Mexican ingredients. They are packed with good-for-you vitamins and have a lovely bright and zesty flavour. Their texture is similar to cooked green beans!
  • Finding fresh cactus can be difficult outside of Mexico but you can easily use the ready-to-eat cactus in a jar. They are ready to eat and we recommend just rinsing them under cold water before using!
  • Do you like your salsas hot? Not an issue! Add serrano chiles or even arbol chiles to this salsa! 
  • This cactus salsa verde is perfect to be enjoyed with eggs or with tacos! 

 

Tip!

  • Brush halloumi slices with a paste made of 1 tablespoon of vegetable oil and about 1 teaspoon of Fajita Seasoning. Grill or fry until golden brown for an added delicious layer of Mexican flavours. 


To Serve

-corn tortillas

-halloumi cheese, grilled

-your favourite beans

-fresh tomatoes

1 Arrange two warm corn tortillas and spread some hot pinto beans. Place a slice of grilled halloumi cheese and ladle plenty of cactus salsa verde over. Top with fresh tomatoes and enjoy!
