We love one-pan meals and this one is one of our favourites for sure. Simple ingredients that come together in an easy and delicious way. Our ingredients always bring that extra touch of Mexican Twists making this dish a family favourite.

One-Pan Spicy Sausage Rice

-300g spicy sausages, sliced into 1cm thickness (roughly)

-1 cup rice

-2 shallots, quartered

-3 garlic cloves, crushed

-1 red pepper, diced

-1 cup cherry tomatoes, halved

-½ cup frozen peas

-a handful of coriander, roughly chopped

-1 chipotles in adobo, finely chopped (or two for an extra kick)

-1 tbsp tomato paste

-1 tsp smoked paprika

-salt and pepper to taste

-½ lemon, juiced

-2 ¼ cups of chicken stock or water

-vegetable oil, as needed 

1 Set a large pan to medium-high heat. Once hot, add the sausage slices and brown them on both sides. Remove them from the pan and set aside. 

2 If the sausages did not render enough fat, add a little vegetable oil to the pan and quickly fry the shallot and the red pepper until they soften for a few minutes. Add the rice to the pan and stir while it fries a little. After a couple of minutes add the garlic and stir for a few seconds until fragrant. 

3 Add the tomato paste next and make sure to cook it for a couple of minutes. Add the smoked paprika. Stir and once the rice has started to change colour add the stock or water and stir. Add the chipotle, frozen peas, lemon juice and season to taste with salt and pepper. 

4 Add the tomatoes and coriander. Return the sausages to the pan. Lower the heat and cover. Cook for 20 minutes, turn off the heat and let it rest for 10 to 15 minutes more before serving.

 

To Serve

-creme fraiche

-salsa macha

-freshly ground black pepper
