Chipotle peppers are jalapeno peppers that have been dried, sometimes even smoked and in the case of chipotles in adobo, they have been cooked in a tomato-based adobo. These are some of the most popular and traditional ingredients for many dishes and sauces.
Chipotles are hot and smokey. For more flavour and less heat, the seeds can be removed. The adobo is packed with all the flavour and only a little bit of the heat. This chipotle sauce is a fantastic option for more flavour and less heat, I highly recommend it for a more controlled kick, I even use it for cooking and not only as a salsa for tacos, for example.

Notes: Once open, any unused chipotles have to be stored in an air-tight container and inside the fridge. They last quite a long time, weeks!
