These tacos are so delicious! The lightly crispy corn tortillas, the creamy black beans with the sweetness from the mole and the very zingy slaw on top are just a beautiful combination of flavours and textures. Add some macha on top and these are just heavenly!

Mole & Black Bean Tacos with Spicy Slaw


Spicy Slaw 

-½ red onion, finely diced

-2 cups white cabbage, finely chopped 

-½ cup radish, finely chopped 

-1 jalapeno, finely diced

-a handful of cilantro, finely chopped

-1 lemon, juiced

-1 tsp salt or more to taste

-½ tsp oregano

-1 tbsp olive oil

-toasted sesame seeds, to taste

1 Mix the diced red onion, lemon juice and olive oil in a small bowl, season with salt and oregano. Allow the mixture to rest for a few minutes while you prepare the rest of the ingredients. 

2 Mix the cabbage, radish, jalapeno and cilantro in a bowl and add the pickled onions. Toss and sprinkle some toasted sesame seeds on top. 


Mole & Black Beans

-150g Mole Negro paste

-150ml chicken stock 

-1 560g Whole Black Beans, drained

1 Mix the mole paste and chicken stock in a pan and whisk until the paste dissolves over medium heat. Once the mole sauce is evenly lush and with no lumps add the drained black beans and stir them into the sauce. Simmer for 10 minutes and after this time, lower the heat to a minimum. Mash some of the beans with the back of a spoon or a spatula for a creamier texture. Continue cooking for another 5 minutes until the mixture has thickened. Serve hot!


To Serve

-10 to 12 corn tortillas

-vegetable oil, the necessary 

-Spicy Slaw

-cream

-salsa macha, always!

1 Add a bit of vegetable oil to a frying pan over medium-high heat. Just enough oil to cover the bottom of the pan will do. Once hot, lightly fry the corn tortillas, one at a time, for a few seconds on each side. Once nice and slightly crispy on the edges, transfer them to a paper-towel-lined plate to absorb any oil excess. Continue with all the tortillas.

2 Add a good amount of mole & black beans mixture to the tortilla and top with spicy slaw. Add cream and for an extra kick of flavour, salsa macha which just makes everything already good, even better!

Notes

  • We love these tacos with lightly fried corn tortillas but you can skip this step and use warmed soft corn tortillas.
  • Black beans and mole are just a match made in heaven. This is an excellent way to use a touch of mole sauce!
  • The spicy slaw works so well here, it brings a touch of freshness and amazing texture too!
