An absolutely delicious and easy open sandwich that is heavily inspired by tuna melt and molletes. Using refried beans as a spread is always a great idea and this one is just a bomb of tasty goodness. Perfect to use leftover chicken and ready in no time. Don’t miss this one!

Spicy Chicken Melt

-2 cups cooked chicken, shredded (leftovers work great here!)

-refried beans, pinto or black

-sourdough slices

-1 or 2 chipotles in adobo, finely chopped

-2 tbsp sundried tomatoes, finely chopped

-2 tbsp red onions, diced

-1 jalapeno, diced

-2 tbsp mayonnaise

-2 or 3 tbsp Valentina Sauce

-salt and pepper to taste

-grated cheese, to taste (we used a mix of cheddar and mozzarella)

-pickled jalapenos, to taste, diced

1 Mix the shredded chicken with the sundried tomatoes, chipotles, onions and jalapeno in a bowl. Add the mayonnaise and Valentina Sauce and season with salt and pepper to taste.

2 Spread the refried beans onto the bread slices, add a generous amount of spicy chicken mix and top with a mix of the cheese and pickled jalapenos mix

3 Place the toast in the air fryer at 200C for 5 to 7 minutes (depending on your air fryer) until the cheese has melted and is golden brown. You can use the broiler too!


Note

  • This chicken melt is packed with so much flavour! You can add any veggies you like to the chicken mix or make it with tuna instead too!
