You need this salsa in your life! Roasted veggies mixed with tomatillos and poblanos make the perfect salsa! Add arbol chiles to taste to achieve a delicious spicy salsa that you can use with everything, from tacos to eggs, to dip with corn tortilla chips or to make simple quesadillas something really amazing.

Poblano & Tomatillo Salsa

-5 tomatillos

-1 large poblano pepper (or two small ones), stem and seeds removed

-3 to 5 arbol chiles

-½ medium white onion

-2 garlic cloves

-⅓ lime or lemon, juice

-fresh coriander, to taste

-salt and pepper, to taste

-1 tbsp vegetable oil

1 Roast the onion, garlic and arbol chiles with the oil on a hot pan. Turn them often to avoid burning, Pay special attention to the garlic and arbol chiles. Remove them as soon as they start to get dark brown. 

2 Add coriander, poblanos, tomatillos, roasted onion, garlic and arbol chiles to a food processor or blender. Add some lime or lemon juice and salt and pepper to taste. Blitz until everything is combined and season to taste with more lime or lemon juice and salt and pepper if needed. 


Notes

  • Roasted salsas are so delicious! Charred bits bring so much flavours to it! Using our Poblanos and tomatillos makes the process so easy with delicious results.
  • This salsa is really amazing. It is delicious with eggs, quesadillas, tacos and even on its own with tortilla chips. Keep it in the fridge for over a week in a sealed container. 

 

Golden Veggie Quesadillas

-corn tortillas

-cheese

-roasted veggies mix (we used roasted sweet potato, red peppers and chickpeas, lightly mashed while still hot)

-pickled onions

-vegetable oil, the necessary

1 Add vegetable oil to a frying pan and bring up the heat to medium-high. Use just enough to cover the bottom of the pan. 

2 Add cheese and your favourite veggies (or leftovers) to a warm corn tortilla and fold in half. Transfer to the hot oil and fry for a few minutes until golden brown on both sides.

3 Serve with plenty of Poblano & Tomatillo Salsa and pickled onions on top.
