This is an easy but super delicious salsa that is perfect for everything! From tacos, burritos and a great option for grill season. The fruity notes from the ancho pepper mixed with the fiery flavour from the arbol chiles are always a delicious combination with a stunning flavour and texture.

Spicy Ancho Salsa

-2 large ripe tomatoes

-1 large ancho pepper, seeds and stem removed

-3 arbol chiles

-⅓ white onion

-2 garlic cloves

-1 tbsp white vinegar

-salt and pepper to taste

-1 tbsp vegetable oil


1 Fry the tomatoes, ancho and arbol chiles, onion and garlic on a frying pan with the vegetable oil. Turn the ingredients often to avoid burning them. Remove the chiles before they get too toasted. They should be glistening and fragrant. Remove the garlic as soon as it is soft and golden. Leave the onions and tomatoes last until charred and soft. 

2 Transfer the ingredients as they are ready to a bowl and cover with a lid or plastic so they steam while the rest of the ingredients are ready. Once everything has come out from the pan, put everything together in the bowl and cover for at least 5 minutes to soften with the steam.

3 Blend everything together until smooth. Season with vinegar, salt and pepper to taste. This salsa is deep and spicy and can be kept in the fridge for over a week in a sealed container.
