This green bowl of beauty can be your favourite soup! Easy to make and so delicious. It has a unique creamy texture thanks to hominy, one of our favourite ingredients. Just a touch gives so much flavour. Add crunchy corn tortillas and more hominy on top and this is just a heavenly soup perfect to survive the winter.

Creamy Spinach & Hominy Soup

-1 tbsp butter

-2 cups potatoes, cubed 

-½ leek, roughly chopped

-2 large garlic cloves, sliced

-3 cups vegetable or chicken stock

-2 big bunches of spinach, roughly chopped

-½ cup hominy, rinsed and drained

-1 lemon, to taste

-salt and pepper to taste

1 Add the butter to a large pot set to medium-high heat. Once it melts, add the leeks and saute for six minutes until it softens. Add the garlic and saute for one more minute. 

2 Add the potatoes to the pot with the stock. Bring up to a boil and cook for 20 minutes or until the potatoes are cooked.

3 Add lemon juice, salt and pepper to your taste and add the spinach and the hominy. Cook on low heat for 10 minutes. 

4 Blend the soup until creamy and serve hot. 


Toppings

-6 corn tortillas

-½ cup hominy

-vegetable oil, the necessary

-Tajin or any of Adobo Seasoning, the necessary

-feta cheese, crumbled

-dukkah, optional

-salsa macha or chilli oil

1 Slice the corn tortillas into strips and add them to a bowl.

2 Rinse and pat dry the hominy before adding them to the bowl with the tortillas. Drizzle with oil and sprinkle with Tajin or Adobo Seasoning to your taste. Toss to coat evenly.

3 Add the tortillas and hominy mix to the air fryer set to 180C for 5 minutes. Shake well and fry for 3 more minutes or until the tortillas and hominy are crunchy. If you are using the oven, spread the tortillas and hominy onto a baking tray and bake at 180C until they are toasted and crunchy, check often and toss them halfway, about 12 minutes, depending on your oven.


Notes

  • This is a hearty, filling, delicious soup. Perfect on its own or as a small starter.
  • The hominy is a hidden star! Even when the amount used is small, the flavour is clearly there and adds a beautiful creamy texture.
  • The crunchy tortillas and hominy as toppings are gold! It is fantastic the way they complete this dish with flavour and texture. 
  • Adding crumbled feta balances the dish beautifully.
  • Dukkah is optional but it works so great! Highly recommend sprinkling some on top.
  • There is nothing spicy here, so adding salsa macha or chilli oil on top is just the perfect last touch.
