This is comfort food taken to creamy epic proportions. A delicious Mexican Twist on a classic thanks to our chipotles in adobo. This is perfect as a side or as a very indulgent main. It is creamy, cheesy, smokey and crunchy on the top. Perfection in a bowl.

Chipotle & Jalapeno Mac & Cheese
-250g pasta, cooked and drained
-¼ cup butter
-3 tbsp all-purpose four
-2 garlic cloves, crushed
-¼ white onion, chopped
-1 jalapeno, seeds removed and chopped
-1 ½ cup milk
-1 cup cream
-2 to 3 chipotles in adobo
-1 tsp smoked paprika
- salt and pepper to taste
-1 ½ cup cheddar, shredded
-1 cup gouda, shredded
1 Cook pasta according to packaging instructions. Drain and set aside.
2 Add the butter to a large saucepan and melt over medium heat. Once melted add the onion and cook for a few minutes until it softens. Add then the garlic and jalapeno and cook for further 2 minutes.
3 Add the flour and whisk to combine with the butter mix. Cook for a couple of minutes before adding the milk. Whisk to dissolve any flour lumps and add the cream next. Keep whisking a little more. Add the chipotles and paprika and cook for 5 to 7 minutes until the sauce thickens. Season with salt and pepper to taste. Remember that you’ll add cheese to the sauce so do not add too much salt at this stage.
4 Once the sauce is nice and thick. Turn off the heat and fold in most of the cheddar and gouda cheese, leaving just a little bit of both to sprinkle on top before baking in the oven. Stir the cheese mix and check to season once more. Adjust if needed.
5 If your pan is oven-safe, add the drained pasta to the sauce and stir to mix well. If not, add the pasta to an oven-safe dish and cover it with the cheese sauce. Sprinkle the remaining cheese mix and the smoky panko topping before baking in the oven at 180C for 20 minutes or until it is bubbly and golden brown on top.
Smoky Panko Topping
-½ cup panko
-⅓ tsp smoked paprika
-⅓ tsp Tajin
-1 to ½ tbsp olive oil
1 Mix all the ingredients and sprinkle over the cheese before going into the oven.
Notes
- This is such an easy but indulgent dish. Rich, creamy and so tasty!
- Adding two chipotles in adobo does not make this dish too spicy but it adds so much depth and flavour. Still, if you want to skip any spiciness, remove the seeds from the chipotles before adding them to the sauce.
- Make it a meal by adding chicken to the mix!
