Chicken Jalapeno Meatballs

These Chicken Jalapeno Meatballs are so good! Made with ginger, garlic, lemon zest and pickled jalapenos, these meatballs are full of flavour and have a lovely texture too! Perfect to have on lettuce wraps for a light but super tasty meal or like we did, with a bowl of rice and fresh veggies on the side. Mexican Twist at its best!

Chicken Jalapeno Meatballs

-500g ground chicken

-1 cup breadcrumbs

-½ tbsp salt

-½ tbsp Lemon Pepper Seasoning

-⅓ tbsp pepper

-1 egg

-2 tbsp vegetable oil

-3 garlic cloves, crushed

-1 tbsp ginger, grated

-½ tbsp lemon zest

-2 tbsp chives, finely chopped

-2 tbsp pickled jalapenos, finely chopped

-vegetable oil to brush the meatballs

1 Work the chicken in a large bowl. Separate as much as possible with the help of two forks. 

2 In a small bowl mix the breadcrumbs with the lemon pepper, salt and black pepper. Add half to the chicken and mix well. Add the second part and mix well again until evenly distributed. 

3 Set the oven to 180C. Have a baking tray lined with baking paper next to your bowl to arrange the meatballs. 

4 Add the egg, oil, garlic, ginger, lemon zest, chives and jalapenos. Mix again with the forks until evenly distributed. Add a bit of oil to your hands and work once more with the chicken mixture with your hands just before making the meatballs. This recipe yields about around 12 medium-sized meatballs. 

5 Roll the meatballs and place them on the baking tray. Once you have made them all, brush them with a bit of vegetable oil and bake in the oven for 25 minutes or until they are golden brown all around and cooked through.


Notes

  • These chicken meatballs are inspired by Asian flavours and adding a Mexican Twist such as the pickled jalapenos makes them absolutely delicious with a touch of tangy spiciness. 
  • You can make smaller meatballs and enjoy them in lettuce wraps for a light and super tasty meal

Tip!

Add Adobo Crumble to this recipe! 
½ cup panko breadcrumbs
1 tbsp curry powder
-½ tbsp Adobo Seasoning
1 tbsp vegetal oil (more if needed)
- Mix everything until evenly distributed. Toast the mixture in a pan until the crumbs are golden brown and crunchy. This only takes a few minutes, keep an eye on it so it doesn’t burn. You can add chickpeas too!
