We made it to another holiday season and we want to give you a couple of different little ideas that can brighten your table to close this year. We know that whatever you'll have for dinner will be delicious and made with love, so our suggestions are easy but bold, small but delicious! They both carry our signature Mexican Twist, a little extra touch to make them unique.
Chipotle Glazed Chorizo Bites
-220g chorizo sausages, sliced into bite-size rounds
-½ cup red wine
-1 to 2 chipotles in adobo, finely diced, seeds removed
-2 tbsp honey
1 Saute the chorizo slices until they release some fat and they brown on both sides. Stir in the chipotles and honey and pour over the wine.
2 Bring the liquid to a boil, bring down the heat and keep simmering until the liquid reduces and it coats the chorizo slices.
3 Serve together with a cheese board for a very tasty snack.
Berry Chipotle Jam
-2 heaped tbsp blackberry jam
-1 tbsp adobo from chipotles in adobo
-3 tbsp red wine
1 Mix all the ingredients in a small saucepan and warm up over medium-low heat until the mixture thickens and reduces.
2 Serve with cheese and biscuits for a sweet and spicy twist to a Christmas board. Another great option is to add a bit of goat's cheese to dates and a touch of this jam over.
Notes
- This creates a small amount of this spiced jam and will be enough to add a chutney-like spread to go beautifully well with bread and cheese.
- If you want to make more of it, keep the ratio of 2 parts jam, 1 part chipotle adobo and 3 parts red wine.
- The right texture should be that of marmalade, perfect for spreading.
