Jalapeño Sausage Rolls

We are such big fans of sausage rolls. They are delicious, comforting and so easy to make! These have been our favourites for a while and we think you’ll enjoy this version with a couple of Mexican twists here and there. These are perfect to share over the holiday season too!

Jalapeño Sausage Rolls

-400g puff pastry sheets

-250g sausages of your choice

-2 pickled jalapeños, finely diced

-¼ cup breadcrumbs

-1 medium white onion, finely chopped

-fresh thyme, to taste

-2 tbsp butter

-1 tbsp olive oil

-½ tbsp apple cider vinegar

-1 egg

-1 tbsp milk

-flour for working the pastry


Toppings

-sesame seeds

-1 fresh jalapeño, seeds removed, finely diced

-fennel seeds


1 Add the butter and olive oil to a frying pan set to medium-high heat. Once the butter has melted, add the finely diced onions and cook for 15 to 20 minutes. Stir often to avoid burning, we want to caramelize the onions. Add a few sprigs of fresh thyme and apple cider vinegar. Lower the temperature to a minimum and continue cooking for 10 more minutes. The liquid should absorb totally and the onions should be lovely, glistening and golden. Allow them to cool down before mixing them with the sausages.

2 Remove the casings from the sausages and crumble them into a bowl. Mix in the chopped pickled jalapeños, breadcrumbs and cooled-down onions. Mix thoroughly until evenly distributed. 

3 Whisk the egg with the milk and keep it handy as well as your toppings. 

4 Follow the instructions from the pastry packaging. If using frozen, allow thawing for at least 15 minutes before working with it. Once the pastry is ready, work it on a floured surface to a rectangle shape, not too thin. Add enough sausage filling to one side of the rectangle, allowing about ½ centimetre on the edge to close the sausage roll. Close the sausage roll over the filling and brush with a bit of the egg wash on the edge left to allow it to close properly. Press the edges with a fork.

5 Brush the sausage roll with egg wash and sprinkle with sesame seeds, fresh diced jalapeno and fennel seeds. 

6 If you want to leave the sausage roll whole, make deep cuts with a sharp knife along the sausage roll. If you prefer, you can slice it into small bite-sized pieces too. 

7 You can also make a large parcel by placing the filling at the centre of a puff pastry piece, brushing the sides and covering it with another puff pastry piece. Close the sides with a fork. Make sure to make deep cuts to allow proper cooking. 

8 Bake in a 180-200C oven for 30 to 35 minutes or until beautiful and golden brown. These are best enjoyed fresh out of the oven! 

 

Notes

  • Adding pickled jalapeños to sausage rolls is just such a good idea. They don’t add heat, they add beautiful tangy flavour instead without being overwhelming.
  • Adding fresh jalapeño as a topping is another fantastic idea. They add just a lovely touch to them plus they look beautiful!
  • Adding caramelized onions is so delicious! They add a touch of sweetness and moisture to the sausage roll. 
  • Try different sausages! The classic Cumberland sausages work great, of course! However, we have used pre-seasoned sausages made with thyme, garlic and parsley. They were delicious! Depending on what you use, season accordingly with salt and pepper. 
  • If the sausage mixture is too dry, try mixing in a little bit of the egg wash plus a touch of olive oil.
