Our Christmas suggestions this year, focus on recipes that are equally delicious and easy to make! This is a perfect example of an easy breakfast, put together in no time and with ingredients that you will most likely use at this time of the year. This breakfast Yorkshire pudding is festive, easy and delicious! Mexican Twist at its best!

Yorkshire Pudding Breakfast
-Bacon, lardons or ham, to taste, diced
-plum or vine tomatoes
-onion, sliced
-coriander and thyme, to taste
-jalapenos, sliced
-eggs
-cheese, to taste
-vegetable oil, if needed
Batter
-140g plain flour
-4 medium eggs, beaten
-200ml milk
-1 tbsp adobo from Chipotles in Adobo, you can also add a whole chipotle, finely diced for a spicier version.
-salt and pepper to taste
1 Whisk the eggs and mix with the flour until smooth. Add the milk, gradually until a very smooth mixture forms. Season with salt and pepper and mix in the adobo from the chipotles. Reserve.
Yorkshire Pudding Breakfast
1 Set oven to 220C. Make sure the oven has the right temperature before placing the Yorkshire inside.
2 Using a large cast iron or oven-safe pan, bring up the heat to medium-high. Add the bacon and brown it for a few minutes. Add the onions and jalapenos, and stir for a few more minutes until they start to get some colour. Add the tomatoes, and blister them a bit. Add thyme and coriander and season with salt and pepper.
Note: If you are using bacon, make sure it has rendered plenty of fat since it is needed for the Yorkshire Pudding to rise. If you are not using bacon, make sure you are using plenty of oil before adding the batter and that this is hot, just as if you were making a normal Yorkshire pudding.
2 Pour the batter into the pan and place it in the hot oven immediately. Bake for 25-20 minutes or until the Yorkshire rises and is golden brown. Pay close attention since this can take less time, depending on your oven.
3 Once the Yorkshire has risen, take it out from the oven, crack the eggs on top, sprinkle with cheese if you are using and place it back in the oven immediately. Continue baking until the eggs are set to your liking.
Notes
- Removing the Yorkshire from the oven to add the eggs, can deflate it, this is ok, it will still taste lovely.
- You can tailor this recipe to your liking! Add sausages, mushrooms, peppers, etc.
- The suggested ingredients and measurements are to taste.
- The little touch from the adobo will give such a lovely smokiness to the batter! By using just the adobo, we are not adding any heat at all, just flavour. Add a whole chipotle for a spicier version!
