It is that time of the year when we realize how many new vegetarian-friendly recipes we have made with our beautiful Mexican ingredients. It’s only logical to make a new collection where we showcase the recipes that keep surprising us with their amazing flavours. Here are some of our new favourites and don’t forget to check our Parts I, II, III and IV of this collection! 


Green Mole Chilaquiles

These Pipian or Green Mole chilaquiles, are delicious. They don’t need anything else but the crunchy tortillas and the sauce to make a meal. We added some beautiful grilled mushrooms as a side and it was just perfection. Green mole is made with a bunch of green veggies and herbs and one of the stars in Mexican cuisine: tomatillos. Whether you use ready-made green mole sauce or even better, you make it yourself, these chilaquiles are a must-try! Link to recipe here


Creamy Chipotle Sauce

This is a beautiful creamy sauce that can be used as a dressing, just like we did with this quinoa salad. The possibilities are endless and the flavour is fantastic! The creaminess from the sunflower and sesame seeds together with the chipotles is just amazing! A favourite of ours for sure. Find the recipe here.


Potato and Jalapeno Latkes

Potato latkes are already such a lovely thing. Add some zingy jalapenos to them and you get beautifully crispy latke with a beautiful Mexican Twist. These are super easy to make! Find the recipe here. 


Crispy Potato Fritatta with Poblano Sauce

Fritatta is just a fancy omelette. As easy and as delicious as you want it to be. This one has a lovely mix of veggies with crispy potatoes. Add to that dollops of super tasty poblano sauce and you have something special. Perfect when you’re short of time and you want to feed a few or to bring over and share. Recipe here. 


Roasted Cauliflower Tacos with Mole Sauce

Mole sauce is one of the most traditional sauces of all Mexican cuisine. There are many different types of it and aside from the green mole, the red mole is a favourite. These light and lovely tacos have just a touch of mole sauce making them completely special. An excellent way to use any leftover mole sauce or to introduce someone to this new flavour. Spicy Tomato Sauce

Roasted tomatoes, lots of roasted garlic and a touch of chile de Arbol. A melt-in-your-mouth tomato sauce with a beautiful Mexican kick. How you enjoy it is up to you! Make an amazing pasta, an out-of-this-world pizza or enjoy the simple things of life by enjoying it with warm, fresh, crusty bread. All options are insanely good! Details here. 


Tacos de Adobada

Tacos de adobada can be also known as tacos al pastor, even when they are not exactly the same. However, the idea is here and even better. The adobo is bold, intensely flavourful and works perfectly well with tempeh. All the details are here. 


Warm Roasted Veggie Salad with Chipotle-Tahini Dressing

This is not the first time we mix chipotle and tahini and it is certainly not the last time we will. It is one of those combinations that work like a charm. All you need to do is to adjust how much chipotle you use to control the heat level. The result is a flavour bomb that brightens up everything! Spiced Chickpeas with Golden Beets Salad

You can change everything in this salad but as long as you keep these spiced chickpeas, you’re up for a lovely meal. The texture and flavour here are everything you need to spice up your meals. Details here. 


Black Beans Avocado Toast

Sometimes, simple is better. This is one of those cases. Everything here is simple but when every layer is delicious the only logical result is that you end with an amazing not-so-simple toast.
