Picadillo Hash

This dish is pure comfort food. This is soul-warming, so delicious, and moreish. Easily put together and with ingredients that are easy to find. We can’t think of a better dish to ease into autumn than this one! Enjoy it with corn tortilla chips or make a taquito (or two) with some freshly made corn tortillas like ours!

Picadillo Hash

-350g mince beef

-2 cups diced potatoes

-1 carrot, diced

-½ red pepper, diced

-⅓ white onion, diced

-½ cup frozen peas

-2 medium tomatoes, diced

-2 garlic cloves, crushed

-1 or 2 Chipotles in Adobo, finely diced

-1 tbsp tomato paste

-½ tsp smoked paprika

-Adobo Seasoning, to taste

-black pepper, to taste

-salt, to taste

-½ cup of water, or more if needed

-1 tbsp butter or vegetable oil

1 Set a large pan to medium heat and add the butter or oil. Once melted and nicely hot, add the potatoes, cover the pan and cook for 10 minutes. After this time, stir the potatoes so all sides get golden brown. Cover the pan once more and continue cooking the potatoes for 10 more minutes. 

2 Remove the lid and add the minced beef. Press the mince with a spoon to separate the beef. The potatoes will continue cooking. After a few minutes and once the mince has started to brown, add a dash of Adobo Seasoning, black pepper, and salt to taste. We’ll check the seasoning near the end so make sure to not add too much salt at this point. 

3 Add the crushed garlic cloves, tomato paste, paprika, and chipotles, and stir until evenly distributed. Lower the heat to a minimum and add the carrots, peppers, onion, peas, and tomatoes. Incorporate all the ingredients well, cover with a lid and cook for 20 minutes. 

4 By this time, the tomatoes must have released some liquid but if needed, add water, little by little to continue cooking. Stir and adjust the seasoning to taste. This hash is ready once the potatoes are cooked through. 

Notes

  • This recipe can easily be doubled.
  • You can adjust the recipe to any other veggies you like or have at hand.
  • You can absolutely substitute beef for mushrooms or other plant-based protein. The key is all in the seasoning and the beautiful golden brown potatoes.

-creme fraiche

-fresh coriander
